Recipe: Rebecca Judd's Flourless Chocolate Cake

If you're anything like us, turning to Rebecca Judd for inspo on beauty treatments, active wear trends (we are obsessed with Jaggad) and the latest in fashion, is a weekly occurence. We were therefore very pleased when she shared a Gluten Free Flourless Chocolate Cake recipe with her 869,000 followers this week! We were also very pleased when we noticed how easy it was, noting that it only requires five ingredients, making it the perfect cake to bake whilst in isolation.





As a Chadstone ambassador, Rebecca has also filmed a tutorial as part of the #StayHomeWithChadstone campaign and was joined by her gorgeous twin boys, Tom and Darcy, and her daughter, Billie, demonstrating that this cake is also perfect for some family friendly baking.


Rebecca Judd has certainly proved that she can do it all, and that includes baking a cake and eating it too!


Ingredients:


  • 200g butter (room temperature)

  • 200g drinking chocolate

  • 200g almond meal

  • 200g caster sugar

  • five eggs


Topping:


  • Icing sugar

  • Raspberries


Method:


  1. Pre-heat oven to 160°C (fan forced oven).

  2. Combine all five ingredients in a bowl, and mix with a wooden spoon until smooth.

  3. Pour mixture into a cake tin (Bec uses a lined springform round tin but you can use anything really*), and bake for 40 minutes.

  4. Once cooled, use a paring knife to run around the edge of the cake pan.

  5. Dust with icing sugar and raspberries if you have them, then serve.


Note: You can also bake this cake in a tray and cut them up as brownies!
