Recipe: Healthy Gluten Free Snickers by Beachside Kitchen

This incredibly delicious recipe by @beachsidekitchen is the perfect healthy treat! These snickers bars are full of healthy fats, contain lots of fibre and, most importantly, are scrumptious! So next time you feel like you're missing out when everyone around you is enjoying a Snickers bar, think of this recipe and start baking!!





HEALTHY SNICKERS

Date caramel: 1 cup soaked medjool dates (cover with boiling water, let them sit 15 mins) 3 tablespoons healthy peanut butter (I like to use Mayver's) 1 teaspoon maca powder pinch of salt 1-2 tablespoons of water (if needed)


Note: This peanut butter by Mayver’s is one of my favourites! It’s available from Coles & Woolworths.


Cookie base: 3/4 cup almond meal 1/3 cup date caramel (from above)

Other: 2 bars dark chocolate (I like to use Pana) 1/3 cup salted roasted peanuts




Directions Line 8x4 pan with parchment paper. Soak dates in hot water. Drain liquid, and place in blender with peanut butter, maca, and salt. Blend until smooth. You may need to add 1-2 tbs water. It will be thick and creamy. Scoop out of food processor and set aside in a bowl.

To food processor, add almond meal and 1/3 cup date caramel. Pulse until a crumbly, but sticky dough forms.

Press cookie base into pan. Then, scoop caramel layer on top. Place in freezer to harden for 1 hour.

Melt dark chocolate (I did 30 second intervals in the microwave). Once the cookie base is hard, remove from freezer. Slice into bars (it made 10 for me) or in half again into mini bars (makes 20). Working quickly, dip cold bars into the chocolate to coat completely, and place on lined sheet. Drizzle any extra chocolate over the bars once all are covered.

Place in fridge to set, and keep stored in the fridge and sprinkle with some flaked sea salt.
