With isolation keeping everyone inside for extended periods of time, baking Banana Bread was a great way to entertain ourselves! So when we found this delicious Gluten Free & Vegan recipe, we were thrilled!
We also loved that it was a little different than your typical Banana Bread as it was filled with our two favourite things; Strawberries and Chocolate!! So if you're looking to bake some Banana Bread with a twist, we highly recommend that you try this delicious recipe by Vanilla Crunch!
Ingredients
150g almond flour
1 Tsp baking powder
1 Tsp baking soda
2 tbsp ground flaxseed
80ml almond milk
4 overripe bananas
80ml vegetable oil
30g erythritol (or sugar of choice)
1 tsp cinnamon
¼ tsp salt
1 tsp apple cider vinegar
60gr sugarfree chocolate drops
150g strawberries
Method
Soak the ground flaxseed in the milk for 10 minutes
Preheat your oven to 180 degree
Combine the almond flour with baking powder, baking soda, cinnamon and salt.
Mash the bananas and combine with the linseed- milk mixture and the sugar.
Add strawberries and chocolate drops
Lastly, add the apple cider vinegar and just shortly combine (don't overmix!)
Bake for about 45-50 minutes
Made this recipe today! Just 1 thing though... in the ingredients there was 80ml vegetable oil but no mention of when to put it in the mixture... I just threw it in when I added the bananas. ✌️
